Ingredients:

  • 1 c. cilantro cream (see recipe)
  • 1 pkg. Pollo con Arroz y Chili Lime
  • 24 tortilla chips
  • 1/2 c. THRIVE Pimientos Rojos - LiofilizadoTHRIVE Pimientos Rojos - Liofilizado ground into powder
  • 12 sprigs cilantro, held in ice water to keep crisp

Directions:

  1. Make Cilantro Cream recipe and refrigerate.
  2. Cook THRIVE Express as package directs (rice will hold for up to 20 minutes).
  3. Place chips on a platter and place 1 large tablespoon of rice on each chip. Drizzle with cilantro cream, dust with pepper powder, and place a leaf of cilantro on top of each in the middle of the rice.
